any city in the meditteranean sea willl be good weather wise
go to rome or malaga or valencia or portugal or morocco

I would suggest any western european cities i.e berlin, paris, venice, madrid. Surprisingly, you can get these pretty cheap if you look on the comaprison sites such as Opodo and Travel Supermarket. Sometimes it is also a LOT cheaper to book flights and hotels seperate, but then you would have to arrange your own transfers. Also, on these websites, it will give you these option of buying two seperate tickets, rather than return- usually works out cheaper. Good luck

Barcelona- Sun, Nou Camp and Picasso Museum
or
Rome-The Colliseum, Trevi Fountain and beautiful churches.
All not too far away, Dublin is nearer and is a great spot for a break, though the weather may not be too good. either way enjoy your holidays.
Depends what kind of break you are after. If it needs to be sunny, then places like Madrid, Barcelona, Rome, Lisbon and Marrakech spring me to mind, all of them would have good weather, food and culture - Barcelona is also handy for the beach. All of them are also served by budget airlines as well.
If you are not particularly after the sun, then Berlin, Budapest and Stockholm are good alternatives
