Well we stayed at the bougainvillea apartments in santa ponsa and it was lovely and peaceful,A good few restaurants of different cultures and excellent food.Great for lovely souvenirs shops and the water park is not that far away and is organized by the reps at the apartments.Quite a walk to the main beach but there is a lovely cove about a 5 minute walk up the road.Great for families who want to relax.
I am from Mallorca myself although I'm actually from the capital, Palma, a place you wouldn't like to go if what you're looking for is quietness and a bit of relax.
I would recommend, then, going to places well far from the capital, as normally, the further out you go, the quieter it gets.
A few resorts I would mention are those ones located in Alcudia, in northern Mallorca, where you can enjoy nice beaches and also short trips to the nearby mountains with great views. You would also be close to Formentor, which has got amazing views over the sea. There are lots of activities to do for tourists in the area, as well as natural spots.
There is also Portocristo, with its famous underground caves. It has also got many closed touristy resorts where you can just chill out, play any sports you like and have nice walks around the coast.
If you prefer the mountain side to relax, don't miss out on Lluc, the monastery, you can even stay there and that is really quiet and relaxing!
As for shopping, I would highly recommend spending some days in the capital since you can find anything you need, apart from its monumental and cultural side!

Anywhere in the north of the Island is good, like Alcudia and Porto Cristo. Stay away from anywhere in the Palma bay area.
The above website is pretty informative. Cala D'Or is lovely - I'm going there next week. It has lots of bars, restaurants and shops, but is not too lively. It also has a lovely marina, and some beautiful coves - Cala Gran is the best. Calas de Mallorca is also a nice resort - quieter than Cala D'Or. Try not to miss the Caves of Drach, near Porto Cristo - if you are staying in one of the east coast resorts don't pay inflated prices to go on the Rep's excursions, take the local bus, and you'll save a fortune. Late May is a lovely time in Majorca. Have a great holiday, wherever you decide to go.
