You have to apply with the Canadian embassy online before you go and have the application approved. If you show up, they'll let you in as a visitor but in order to upgrade your visa they'll make you leave the country while it's being approved (which isn't that much of a pain in the *** if you're in Toronto, it's like a 1 hour drive to the border but the you might get trouble with the Americans). Just check out the Immigration and Visas page and it costs a couple hundred dollars but it's pretty quick to do and I think they give you a year or two long visa.
In most cases you have to apply for a work permit. Not everyone who wants to come and work has to. I suppose it depends what country you're coming from and what you're going to do here. Because you're british, you're right, you don't need a visa but to legally be able to work here you most likely will need to apply for a work permit no matter where you want to work in Canada. Most people have to apply outside of Canada, but some can apply here. Again, I don't know the exact rules. Here is the Canadian Citizenship and Immigration website. I have done many programs through Bunac and always found them to be efficent, helpful and organised. You can apply online for your visa on this website and they will handle pretty much everything. Going through this organisation also means that if you have an emergency in Canada you can call them for help.
Do not, under any circumstance go to Canada and try to work without the proper documentation! It really isn't worth it and it can mess up trying to get into other countries at a future date if they find out you were working illegally.
